For our first anniversary, we were honored to feature Eneko del Valle, whose participation brought a unique perspective to the evening’s gastronomic experience.
The night began with Familia Valdelana Semidulce 2023, a white wine known for its delicate sweetness and ability to enhance the flavors of each dish.
For the first appetizer, we served Croqueta de calçots with romesco sauce, a crispy reinterpretation of this Catalan classic. Made with calçots, panko, and a creamy béchamel, the croquette was paired with a rich romesco sauce, where tomato, garlic, almonds, and paprika combined to create a balance of smoky and sweet flavors. For guests with nut allergies, the sauce was adapted by incorporating toasted bread instead of almonds.
Next, we presented Pulled pork with truffled mashed potatoes, a dish where slow-cooked pork, infused with spices, honey, and white wine, melted in the mouth. The accompanying truffled mashed potatoes added a smooth texture and deep aroma, elevating the dish with a touch of sophistication.
To conclude the evening, we served a Gin Cooler, a light and refreshing cocktail blending gin, apple juice, and white vermouth. With its herbal and fruity notes, it provided the perfect finishing touch to a remarkable night.
