For the eight edition of our culinary encounters, we were honored to feature Iker Oroz, a master baker from the renowned Panadería Anik, famous in Navarra for its commitment to artisanal bread and traditional processes.
This special edition aimed to highlight the craftsmanship behind high-quality baking, reflected not only in the breads but also in the evening’s curated menu.
The night began with Familia Valdelana 2023, a white wine made from Malvasía and Viura grapes, known for its freshness and ability to enhance the flavors of each dish.
For the first appetizer, we served Polenta with marinated chicken, an exquisite combination of chicken thigh marinated with garlic, rosemary, and lemon, paired with creamy polenta enriched with butter, Grana Padano, and a fresh touch of chives.
Next, we presented Calamari with samphire and creamy curry sauce, a dish that harmonizes the tenderness of calamari with the freshness of samphire and a velvety curry sauce made with coconut cream, garlic, ginger, and spices, achieving a perfect balance between marine and spiced flavors.
To conclude the evening, we served an Apple Moscow Mule, a refreshing cocktail crafted with vodka, apple cider, ginger beer, and a hint of lime, delivering a vibrant and aromatic finish to the experience.
