For our tenth edition, we were pleased to welcome Javier Isasi, owner of El Rincón de Iruña.
The evening featured two carefully crafted appetizers.
We began with a Signature Ensaladilla, a refined version of the classic dish, prepared with olive purée, tuna, ají amarillo paste, potato, lemon, Kewpie mayonnaise, and pea microgreens. Following this, guests enjoyed Crispy Pork Belly with Burnt Corn, served over a smoked corn purée and complemented by a leek sauce and garlic oil.
To accompany the menu, we served Valdelana Semidulce, a balanced and elegant white wine, along with a refreshing mojito, the perfect pairing for the atmosphere of the night.
