Culinary Nights VI welcomed Javier Isasi, master bartender from the renowned Pamplona cocktail bar El Rincón de Iruña, as the guest speaker. Javier shared the origins of his bar, emphasizing the significance of using local products and his dedication to educating customers by narrating the journey and heritage behind the ingredients he serves. His talk offered an insightful perspective on the artistry and storytelling integral to crafting exceptional cocktails.
The evening’s menu began with Familia Valdelana 2022, a blend of Malvasía and Viura grapes from Rioja Alavesa. This wine is celebrated for its aromatic intensity, featuring floral and citrus notes that paired perfectly with the dishes. Guests enjoyed a Crispy Pork Belly with Chimichurri and a Tuna Tartare with Aji Amarillo, a dish that balanced the boldness of the tartare with a touch of Peruvian flair.
To elevate the culinary journey, the meal was paired with a Hemingway Daiquiri, a cocktail inspired by the literary giant Ernest Hemingway. This drink, crafted with grapefruit juice and rum, was a nod to Hemingway’s love for Pamplona, a city he immortalized in his works. Hemingway was captivated by Pamplona's vibrant culture, famously attending the San Fermín festival and penning "The Sun Also Rises". The cocktail aimed to echo his appreciation for the city while paying homage to the drink he popularized. This thoughtful pairing tied together Javier’s narrative, the local ingredients, and Hemingway’s enduring connection to Pamplona, offering guests a multi-sensory and culturally rich experience.
