Culinary Nights I marked the debut of our events, featuring Sergio La Torre as our first guest speaker. Sergio, a Peruvian chef from Mixtura, a restaurant located in Huarte specializing in Peruvian-Japanese fusion cuisine, introduced the audience to the rich cultural history of Peruvian gastronomy. He delved into the origins of Peruvian cuisine and explained how the arrival of Japanese immigrants at the end of the 20th century brought about significant cultural and economic changes, leaving a lasting impact on the culinary landscape.
To complement the chef’s talk, we served VI-VE 2022, a balanced Tempranillo and Viura wine, alongside two carefully chosen dishes that embodied the fusion theme: Tiradito Nikkei, a dish of thinly sliced fish marinated in a citrus-soy dressing that merges the bold flavors of Peru with the delicate techniques of Japanese cuisine, and Japanese Karaage Chicken, crispy fried chicken marinated in ginger, soy, and garlic for an explosion of umami. These pairings were designed to enhance the sensory journey and create a connection between the chef’s narrative and the dishes, offering a unique and immersive experience for our guests.
