Culinary Nights II, our second event, took place at the restaurant of the University of Navarra Museum and featured Eduardo Llop as our guest speaker. Eduardo, a Peruvian chef based in Pamplona, is the owner of Les Amis, a restaurant recognized in the Michelin Guide for its innovative approach to blending French culinary techniques with contemporary flavors. During the event, Eduardo shared insights into the origins of French cuisine, explaining how it became the foundation for many modern culinary traditions around the world.
To complement the chef’s talk, we paired the evening with Valdelana 2023, a young Tempranillo wine known for its fruity notes and balanced acidity, which perfectly matched the evening’s dishes. Guests enjoyed a Tuna Tartare, delicately seasoned to highlight its freshness, followed by a Ratatouille with Huancaína Sauce. This dish paid homage to Eduardo’s culinary philosophy, merging the classic French vegetable medley with a traditional Peruvian cheese-based sauce. The wine pairing was chosen to enhance the flavors of both dishes, bridging the bold and vibrant Peruvian influences with the elegant subtlety of French cuisine.
